BARBECUED COUNTRY RIBS

INGREDIENTS:

1/4 cup. Brown Sugar
1 tbs. Salt
1 tbs. Celery Seed
1 tbs. Chili Powder
1 tsp. Paprika
1/4 cup. Vinegar
1 cup. Ketchup
1/4 cup. Honey
2 tbs. Hot Sauce

INSTRUCTIONS:

Combine all of the ingredients into a mixing bowl stir together until mixture is well blended and set to the side..

Country rib preparation:

Trim the fat from the ribs and cut them into serving size pieces. seasoning with salt,pepper and garlic. Place on the broiler and broil 15 to 20 minutes turning each side to remove as much of the excess fat as you can and until meat has browned. Apply the sauce over all, continue basting with the sauce until ready to serve.

INGREDIENTS:

1 Pound Ground Beef
1/4 Cup. bread crumbs
1 Egg
1/2 ts. Salt
1/4 ts. Pepper
1/4 ts. Minced Garlic
1/2 Cup. White Onion Finley Chopped
1 Tbs. Worcestershire Sauce
1-4 ounce. Can tomato paste

BARBECUE SAUCE TOPPING:

INGREDIENTS:

1- 8oz. Can Tomato Sauce
1/4 cup. Water
3 tbs. White Vinegar
4 tbs. Brown Sugar
2 tbs. Prepared Mustard
1 tbs. Worcestershire Sauce

INSTRUCTIONS:

Mix together ground beef, bread crumbs, onion, egg, salt, pepper, garlic, worcestershire, tomato paste, Put in a loaf pan. Combine all the ingredients for the topping in a mixing bowl, Pour over your meat loaf. Bake at 350 degrees for 1 hour and 15 minutes. Makes 4-6 servings.

INGREDIENTS:

1 small. Diced Onion
1/2 cup. Diced Celery
1 each. Diced Green Pepper
1 cup. Tomato Soup
1/4 cup. Catsup
1/8 cup. Vinegar
2 tbs. Butter
2 tbs. Brown Sugar
2 tbs. Worcestershire Sauce

INSTRUCTIONS:

Use a small saucepan and add the butter,onion,celery,green pepper to the pan stirring till the onion starts to caramelize. Than add remaining ingredients and heat for ten minutes. Use this sauce for small wieners or pour over already browned spare ribs.

INGREDIENTS:

1 cup. Catsup
2 tbs. Vinegar
1/3 Cup. Brown Sugar
2 tbs. Worcestershire Sauce
1 tbs. Heinz 57 Sauce
1/3 Cup. Chopped Onion
2 tsp. Dry Mustard
1 Each. Whole Lemon
1/4 cup. Liquid Smoke

INSTRUCTIONS:

Cut and squeeze the juice from the lemon and placing it in a cup, Combine all of these ingredients in saucepan, including the lemon cut in halves bring to boil, remove the pan from heat and remove the lemon from the sauce, then take your lemon juice that’s in the cup, using a basting brush apply juice to the meat then add sauce over precooked meat,

Plum BBQ

INGREDIENTS:

1- 10 ounce. Jar Plum Jelly
1/3 cup. Corn Syrup
1/3 cup. Soy Sauce
1/4 cup. Chopped green onions
2 tbs. Garlic, minced
2 tsp. Ground Ginger

INSTRUCTIONS:

Mix all ingredients in to a saucepan and stir them together heating until the mixture is blended and the sauce start to get hot . Remove from heat and set aside.

Preparation for ribs

INSTRUCTIONS:

Put the ribs in a pot and add enough water to cover. Simmer them until ribs are very tender. Remove them from the hot water and drain them well. Put the ribs into a shallow pan and allow the ribs to rest for ten minutes befor the final cooking. Baste the ribs well with sauce on both sides then putting the ribs in the oven. Bake at 350 degrees until completely tender. Basting with sauce several more times during the cooking prosses.

For barbecue grilling, follow the same prosses in the instructions above for rib preparation. Cook them on a grill bone side up and baste the ribs well then turn or flip the ribs over and continue cooking. Keep basting them for 15 minutes as they cool and serve it up.

Beer BBQ Sauce For Chicken

Beer BBQ Sauce For Chicken

3 pounds chicken parts
1 can beer
2 cups ketchup
1/2 cup honey
1/2 cup brown sugar
6 Tbs Vinegar
3 tbs liquid smoke
1 tbs lemon juice
2 tsp mustard powder
2 tbs onion powder

Pre-cook the chicken in a 400 degree preheated oven for 25 minutes. Make your Beer BBQ Sauce while the chicken is cooking.

Add all of the ingredients into a mediun saucepan and heat just to a boil. reduce heat and simmer for 20 minutes stirring every 5 minutes.

Move the chicken to the BBQ grill and baste with the sauce. Turn it every few minutes and continue basting all sides. Cook the chicken until it reaches an internal temperature of 165 degrees.

BBQ MEATBALLS

INGREDIENTS:

1 Pound. Ground Beef
1 Each Small Onion, Chopped Fine
1/2 Cup. Bread Crumbs
1/2 Cup. Half And Half Milk
1 Each. Egg Well Beaten
1/4 tsp. salt
1/4 tsp. Pepper
1/4 tsp. Granulated Garlic

INSTRUCTIONS:

Take a large bowl, add all the ingredients together mixing till blended, use a cookie sheet and hand roll meat in to round balls. Place them on cookie sheet and bake them at 350 degrees for 20-30 minutes, remove from oven and drain the oil, and place meatball in casserole dish and pour your sauce over meatballs to cover.

SAUCE INSTRUCTIONS:

1/2 Cup. Vinegar
1 Cup. Catsup
1-1/2 tsp. Worcestershire Sauce
1 tsp. Chili Powder
1/2 Cup. Brown Sugar
2 tbs. Liquid Smoke

INSTRUCTIONS:

Combining all the ingredients shown above mix in a glass bowl, stir all the ingredients together and place them in to the microwave for 3 minutes. Remove and stir it before pouring it over the meatballs, Garnish and serve.
Pour over meat balls and bake 1 hour at 350 degrees.

INGREDIENTS:

1/2 cup. Soy Sauce
1/2 cup. Water
1/4 cup. Garlic Granulated
1/4 tsp. Ginger Ground
1/2 cup. Sugar Granulated
1/2 cup. Catsup
2 tsp. Cracked Red Pepper
2 tsp. Salad Oil
2 tbs. Sesame oil
1/2 cup. Sliced Onions

INSTRUCTIONS:

Combine all the ingredients shown above in a mixing container stir till well blended, then add to the other container with the barbecue meats. You can use this with chicken, pork, fish or beef this is an all purpose marinade.

Dry Rub for Ribs

INGREDIENTS:

1 1/4 cups.  Granulated sugar
1 1/4 cups.  Brown Sugar
1/2    cup.  Salt
1/4    cup.  Black Pepper
1/4    cup.  Granulated Garlic
1/4    cup.  Paprika

INSTRUCTIONS:

Putting all these ingredients into a bowl. You need to mix this very well due to the fact that brown sugar will clump up if you let the rub sit in the bowl, the brown sugar can dry.
Before using the dry rub, mixing it well will insure proper blending.

BARBECUE BEEF CUPS

BARBECUE BEEF CUPS

INGREDIENTS:

1 Pound. Ground beef
1 tbs. Minced Onion
3/4 Cup. Shredded Cheddar Cheese
1/2 Cup. Barbecue Sauce
1 1/2 tbs. Brown Sugar
1-8 oz. Can Refrigerated Biscuits

INSTRUCTIONS:

Saute the ground beef until brown and crumbled. Drain off the pan drippings, then stir in the barbecue sauce. Add onion and brown sugar. Place each biscuit in a greased muffin cup, pressing the center pushing out to cover bottom and sides of the muffin pan. Spoon meat mixture into cups and sprinkle with cheese. Bake at 400 degrees for 10-12 minutes or until golden brown. Makes 12 servings.
