Gourmet Baked Potatoes On The Barbecue Grill

Most baked potatoes are simple and plain. A potato, an oven or grill, and some foil. Then we top them with all the scrumptious things we love to have with them. Well, I am about to show you a new way to bake your potatoes on the grill so they are ready to eat as soon as they are done.

When Grilling potatoes, always be sure to scrub them thoroughly before you begin. You are going to begin by preparing the potatoes before cooking them. This way all the flavors will be cooked right into them. These are great for take alongs and picnics.

Start by cutting all of your potatoes in half. Do not peel them, just cut them. Then using a metal ice cream scoop or melon baller remove a 1-2 inch round section from each half. This is where you want to add your flavors. You can put anything you like here. Some good ideas are bacon bits, butter pats, chives, and other seasonings. Avoid too much salt using this method because it tends to stay right where you put it.

The next step is to put your potato plugs that you removed back into the hole. Just shove them in as far as they will go. Then put your two halves together and wrap them snugly in foil. I like to use a couple layers of foil to help hold things like butter and cheese in. Once they are wrapped, just toss them onto the grill and let them cook. The flavors and smells of the herbs really get into the potato during the cooking process. Now you never have to eat bland baked potatoes again. These are wonderful when cooked with ribs and corn on the grill.

Grill Smoked Ham

The Holidays always bring back fond childhood memories. One of those memories is the flavor of the holiday ham. These days we simply pick up a pre-smoked ham at the market and heat it up in the oven. It is simple and convenient, yet somehow it just isn't the same. How do we get back the woodsy smokey flavor of years gone by?

 

Some like to start with a fresh ham and cure and smoke it right from the start. Although this is probably the optimum method, most of us have to work and tend to our daily activities. We just don't have the time to sit at home for an entire day or two tending to dinner. There is another way to get the true smoke flavor you love and remember and you can do it right on the bbq grill in just a few hours. Image by 	John Goetzinger Kettle Grills and smoker grills work best. If you have a lower profile grill you can always cut your ham in half to make it fit under the lid. Trust me it is worth it.

 

Get your favorite Hickory Wood Chips and smoke your ham with them to give it that authentic wood flavor. The key is to moisten the ham before you begin smoking it so it doesn't get too dry. You can do this by soaking it in a pot of water for 2-3 hours prior to putting it on the grill. Now here is the tricky part, you want your grill to remain right around 300 to 350 degrees throughout the smoking process. Keep a meat thermometer on hand and when the internal temperature reaches 160 it is done. This should take a little over three hours for a ten pound ham. It is important to check the temperature often during the last hour to ensure that your ham doesn't get overcooked and become dry. However, be sure to replace the lid as soon as you are done to retain as much heat as possible. This will result in a ham with a true smokey flavor and the difference is absolutely amazing.

Ingredients:

1 (14 oz.) Bottle Ketchup
2/3 cup. Chili Sauce
1/3 cup. Hot Mustard
1 tbsp. Soy Sauce
1/4 cup. Worcestershire Sauce
4 Dashes Tabasco Sauce
3/4 cup. Brown Sugar
1/4 cup. Vinegar
1 tbsp. Lemon Juice
1/2 tsp. Black Pepper
1 tbsp. Vegetable Oil
1/2 cup. Beer

Instructions:

Mix all ingredients thoroughly. Simmer 15 minutes in large saucepan. This is a hot spicy sauce. If you prefer it a little milder, substitute regular mustard for the hot mustard and cut down on the Worcestershire sauce.If you have a flavorizer bar on your grill, toss in some wood chips for extra flavor.

Ingredients:

1 14 oz. Bottled Ketchup
1/2 cup. Vinegar
2 tsp. Dried Mustard
4 tbsp. Worcestershire Sauce
3 tbsp. Liquid Smoke
1/2 can. Coke Soda
3/4 cup. Brown Sugar

Instructions:

Combine all these ingredients in a saucepan and Simmer all for 40 minutes stirring occational to blend together, when thickened remove from heat and let cool, frigerator overnight and keep in storage for latter use. This is a very good sweet and zesty baebeque sauce.

Quick Barbeque Sauce

Ingredients:

2 cup. Catsup
3/4 cup. Molasses
4 tbsp. Vinegar
8 tbsp. Butter
1/2 cup. Water

Instructions:

Combine all the ingredients in a saucepan and heat till mixture in blended will stiring occationally when ready remove from heat and let cool, then apply the sauce to your favorite barbecued items.

Orange Molasses Barbeque Sauce

Ingredients:

1 10 oz. Can Condensed Tomato Soup
1 8 oz. Can tomato Sauce
1/2 cup. Molasses
1/4 cup. Cooking Oil
1/2 cup. Vinegar
1/2 cup. Brown Sugar
1 tbsp. Minced Onion
1 tbsp. Seasoned Salt
1 tbsp. Dry Mustard
1 tbsp. Grated Orange Peel
1 1/2 tsp. Paprika
1/2 tsp. Black Pepper
1/4 tsp. Garlic Powder

Instructions:

Combine all the bbq sauce ingredients. Bring to a boil using a medium size saucepan stiring til blended, reduce heat to simmer. Cook about 20 minutes, uncovered. Store any unused sauce in the refrigerator, covered after cooled.

Near Beer Barbeque Sauce

Ingredients:

2 cup. Catsup
1 tbsp. Tabasco Sauce
3/4 cup. Brown Sugar
1/4 cup. Vinegar
1 tbsp. Lemon Juice
1 tsp. Cayenne Pepper
1 tbsp. Vegetable Oil
1/2 cup. Non Alcoholic Beer
4 tbsp. Liquid Smoke

Instructions:

Combine all of these ingredients in a saucepan and heat and stir with a wisp until blended, simmer for 15 minutes and remove from heat, and cool to room temp befor applying. Mixture can be refrigerated for later use. This makes a great beer barbeque flavor with out the alcahol of beer.

Ingredients:

1 cup. Ketchup
1/2 cup. White Vinegar
1/4 cup. Worcestershire Sauce
1 cup. Brown Sugar
2 tbsp. Dry Mustard
1 tbsp. Ground Ginger
3 tbsp. Butter
1 tbsp. Red Hot Sauce
2 tbsp. Minced Garlic

Instructions:

Mix all ingredients in saucepan, heat over medium heat until smooth.

Grilled Fish Barbecue Sauce

Grilled Fish Barbecue Sauce for the catch of the day.

Ingredients:

1/4 pound melted Butter
1 tbsp. Roasted Garlic paste
2 tbsp. Lemon Juice
1/4 tsp. Salt
1/4 tsp. Black Pepper
1 tbsp. Lowrys Seasonning

Instructions:

Combine all these ingredient in to a container and blend together with a spoon or rubber spatula, and mix till blended and apply to your fish of choice. This recipe is good for fresh or saltwater fish, for grilling of baking. For camping, apply the bbq sauce on the fish and  use two sheets of foil to wrap your catch of the day and grill over the campfire bbq .

Note: clean and oil your grill befor using its safer and cleaner cooking,
have fun and good eatting.

Fourth of July Anniversary bbq Sauce

Ingredients:

Vinegar 1 Cup.
Catsup 3 Cups.
Brown Sugar 1 Cup.
Maple Syrup 1/2 Cup.
Honey 1/2 Cup.
Oranges 2 Each Cut Halves
Liquid Smoke 1/4 Cup.
Cayenne Pepper 1 tbsp.

Instructions:

Make the sauce ingredients the day before the 4th of July to really set the flavors.

In a small pot add the catsup, vinegar, brown sugar, maple syrup, and cook on medium heat stirring till all the sugars dissolve and combine together, then add liquid smoke and cayenne pepper, stirring to combine cut the oranges in half and squeeze the juice into the pot and add orange rind as well, stir lightly till all are mixed simmer for 10 minutes and remove from heat.

Saucing Instruction:

This 4th of July BBQ sauce works well with pre cooked food like beef, pork, or chicken and duck, as a bbq glaze and sauce for cooking.
